Thyme is a low growing herb native to the Mediterranean where it can be found in the wild. It is hardly surprising, therefore, that it features strongly in Mediterranean cuisine where it is widely used as a seasoning for lamb dishes. (The slightly floral flavor of thyme lightens the sometimes gamey flavor of lamb.)
Thyme has a strong, fresh, lemony flavor, and pairs well with meat, tomatoes, and beans. It also makes a tasty contribution to soups, stews, sauces, and vinegars.
Thyme is effective against colds, flu, and upper respiratory infections. It also aids digestion.
